Nothing fancy tonight, just "trash soup". What is "trash soup" you ask? Thanks to my friend Beth Holloway, I know what is.
Trash Soup: Keep a 1/2 gallon freezer bag handy. Whenever you have a little bit of leftovers left, and it's not quite enough to actually serve, just throw them in the freezer bag. So you never know what you'll end up with. I usually throw a sprig of fresh rosemary in there too (from my rosemary bush, remember?). The only thing I purposely add is some extra sauteed onions. I tend to use them in a lot of different things, so I'll actually make a little extra every now and then. When the bag is full, you can take it out of the freezer and put the contents in a large sauce pan. Add some chicken broth (ALWAYS keep chicken broth in the kitchen!) and heat slowly to thaw the meats.
If what you end up with doesn't suit your fancy, melt some cheese over the top. And if THAT doesn't suit your fancy, then plop some sour cream on top too. You can't go wrong.
Dessert: Weight Watchers dark chocolate rasberry icecream bars. They're REALLY good!
