Tonight's dinner was bronzed tilapia and sauteed squash and red onion.
The tilapia: actually, it's from Kroger's frozen seafood department. I like tilapia; it's a nice meaty "white meat" fish. The package comes with two fillets in it, and costs about $7. I took one out of the box this morning and thawed it in the fridge so it'd be ready to go when I got home.
The squash: a few nights ago, I took out my big Calphalon chicken frying pan and put some big chopped up pieces of red onion it. Then sliced up a couple of zucchini squashes and a couple of yellow squashes and added them to the onion. Then drizzled just a bit of olive oil over the top. Then put the lid on tight and let it all simmer for about ten minutes. Stirred, then let it cook with the lid on for about ten more minutes. This part is what actually gets it "cooked." Then took the lid off, and stirred every few minutes to get it all browned up good. I just LOVE what the red onions do. Not only do they add a really good flavor, but the color makes it pretty. Think about it: you have yellow, green and red all in one place! I make a few servings at a time and just put the extra in a Tupperware thing in the fridge.
SO: time for dinner. Just take a saute pan out. Smack the thawed fish and the leftover squash in there over medium heat. One skillet for my whole dinner and it was all ready to eat in about ten minutes. How easy is that?! :-)
