Tonight's dinner was joint effort with the lovely and talented Miss Leslie Owens. I took one of those steaks I had gotten ready ahead of time when I got home from Kroger today and Leslie brought one of her own. Made some more that that squash and red onion mixture that I talked about a few posts ago. Rounded it out with some of the Leslie's sweet potato concoction, which was soooooo simple and soooooooooooo good.

Steak: Melt some butter in a hot cast iron skillet (a "must have" for any kitchen!). Smack those babies in there for about two minutes or so on each side (for medium-rare, on the rare side). Let them sit for a minute or so before serving, so that all the juice won't drip out when you cut it. Yes, what those TV chefs say is true.
Sweet Potatoes: Thinly slice a large sweet potato and drizzle olive oil on the slices. Then top with chopped basil. Fresh thyme makes a nice addition as well. Bake at at 350 degrees for about 45 minutes in a casserole dish. (props to Leslie for that one!.)
