It took me three tries, but I did it!! I highly recommend sampling the batter while you're making these-hint! hint!
Pumpkin Spice Rum MufCuppinCakes
(they’re not really muffins, but they’re not quite
cupcakes….)
I box of spice cake mix
1 1/3 c. pumpkin spice coffee creamer instead of water
1 1/3 c. vegetable oil
1 package of pumpkin spice Jello instant pudding (only available
seasonally, and at Walmart)
A couple good shakes of pumpkin pie spice
½ c. Captain Morgan’s spiced rum
Beat with blender till really well mixed
Spray cupcake paper things with Pam for baking spray. Put them in the muffin pan slots. Fill them about halfway with the all the
stuff above. Splash a little more rum on
each one.
Bake at 350 degrees for about 20 minutes. They’re done when you can put a toothpick in
them and it comes out clean. Let them
cool a bit, then pierce a few holes in top of each with a sharp knife. Then sprinkle a bit more rum on each.
Cream cheese frosting on top is yummy.
